Cast Iron Berry Cobbler

This recipe doesn’t include any of our farm fresh meat, however, we know you will enjoy it and just have to share! If you love berry cobbler, you are going to LOVE this simple recipe.

INGREDIENTS:

20oz frozen berries thawed - strawberries, blueberries, raspberries make a great mixture

1/3 cup granulated sugar

2 tbsp cornstarch

1 tsp fresh lemon juice

1/2 cup butter melted

1& 1/3 cup self-rising flour

1 cup granulated sugar

1 cup whole milk

1 large egg

1 tsp pure vanilla extract

1/2 tsp pure almond extract

1/2 tsp ground cinnamon

Instructions:

  1. Preheat oven to 350F

  2. In a medium mixing bowl, mix berries with 1/3 cup of granulated sugar, cornstarch and lemon juice. Mix gently until the ingredients are evenly coated and cornstarch has dissolved.

  3. In a separate bowl, whisk together flour, 1 cup of granulated sugar, milk, egg, vanilla, almond extracts and cinnamon. Whisk until no lumps remain.

  4. Add melted butter to a 12in cast iron skillet. Swirl until it coats the bottom and sides. Immediately pour batter into skillet. Dollop fruit over batter using tbsp.

  5. Bake for 40+ min or until puffy and golden. Serve warm with vanilla ice cream or whipped cream.

    *TIP - Check at 40min. Additional time to cook is likely, watch for the golden color and use a toothpick in the center
